Nutella Mousse {for two}


Last Thursday I had one of those mornings. It all started going south when my computer decided to channel it's inner turtle. It was running so slow it took me an hour to do what should have taken 15 minutes. Then Jordan was taking her sweet time getting ready to go to school.

By the time I had to tell her to go back upstairs and turn off her light for a third time, I *may* have been yelling.

Of course, afterwards, I felt guilty. It wasn't a yell-able offense, but my fuse was already short.

I apologized to her in the car on the way to school. I told her people lose their tempers for not good reasons sometimes.

To which she replied, "It happens to you a lot Mommy."

Ouch.

I tried to reason with her a little. "Well, honey, it happens to everyone," I told her.

She thought for a second. "It never happens to Daddy."

Oh, snap. Final score: Jordan 1, Mommy -5.


Parenting is hard work. So sometimes we adults deserve a special treat all our own. A perfect little one, that makes just enough for two.

No, not enough for two and "Mommy pleeeeeeeeeeeaaaaaaaaaaasssssseee can I have a bite?!"

Just enough for two.

I made a Nutella mousse to share with my husband.


And I gave it a crust, of course. Lorna Doone cookies, all smooshed up.

Think of it as a reward after a long, hard, days work of being a parent.


Well, a reward for my husband anyway. I'm still in time-out.


Nutella Mousse Pies {for two}

Ingredients (Serves 2)
  • 6 Lorna Doone (or similar) cookies
  • 1 tablespoon butter, melted
  • 2 tablespoons Nutella
  • 1 cup Cool Whip (I used fat free)
  • Additional Cool Whip and/or cocoa powder, for topping
Instructions
  1. Finely grind cookies in a food processor. Mix with melted butter. Divide in half and press evenly into the bottom of two ramekins. Chill completely before filling.
  2. Whip Nutella and Cool Whip with a hand-held mixer until fully combined. Divide evenly amongst the two ramekins. Top with additional Cool Whip and a dusting of cocoa, if desired. Chill until ready to eat.

Crazy Sweet Tuesday

Welcome to Crazy Sweet Tuesday!

Before we get started I want to point out, since you're probably here and not in your reader so you can link your fabulous desserts, that I have some new design elements here on my blog. You may have noticed new page tabs, new social media buttons, and sidebar gadget titles. Aren't they awesome? I just had them done for me by the absolutely wonderful Ashton over at Something Swanky Designs. (You may also be familiar with her equally fabulous blog, Something Swanky?) Onto the features this week:


Non-Valentine's Day Donuts by Trilogy Edibles. They have caramel!


Sugar Cookies with Cinnamon Imperial Frosting by The Traveling Spoon. I love the frosting idea. And the cookies are so pretty too.


Peanut Butter Granola Bars (under ice cream!) by Dwell on Joy. Granola = Healthy. So I can eat the ice cream too. Duh!


Sweetheart Cinnamon Rolls by The Charm of Home. My daughter would love these for Valentine's Day breakfast. If she gets to the table fast enough (before I've eaten the whole can).


Butterfinger Cookies by The Farm Girl Recipes. I'm stunned in to silence over these. The photo has created a drool factory in my mouth.


Chocolate Peanut Butter Popcorn by Sumptuous Spoonfuls. There is even Peanut Butter Captain Crunch in there. This goes on the "must make" list.

Coconut White Chocolate Brownie Truffles


Never has a recipe fail turned out so good.

I hate having recipe failure. One, because it's a waste; of time, of energy, of ingredients and money. And two, because I'm not good at failing.

I dropped out of Honors English in High School after the first report card because I got a B. Because, to me, a B was failing. (This is one of those things I'm trying NOT to pass on to my kid.)

I'm also not good at being wrong, we've talked about that before. And being wrong is sorta like failing: it sucks.

Anyway, so when I got the brilliant idea to make White Chocolate Brownies by adapting one of my favorite brownie recipes, I knew there was a chance they wouldn't work.

And, as brownies?


They didn't work. Even though I greased the foil, they wouldn't come off. They were way too greasy too. But they tasted awesome. I knew I was in danger of taking the pan to the couch with a spoon and stuffing my face while I rotted my brain with The Real Housewives of Beverly Hills. But I hated to throw them away. (Waste, and all that.)

So I did what any self-respecting blogger would do.


I crumbled them up and added some toasted coconut.


Rolled them into balls.


And made them into truffles. Covered in white chocolate melts.

Like I said before, best mistake ever. Instead of taking the pan to the couch and eating all the brownies with a spoon, I'm eating them all, but slower. Over several episodes of the Housewives. (Don't even get me started on Kim. Or Brandy's...chest. Does she own a bra?)

Coconut White Chocolate Brownie Truffles

Recipe adapted from Martha Stewart's "Perfect Brownies"

Ingredients (36 truffles)
    For the White Chocolate Brownies
    • 8 tablespoons (1 stick) unsalted butter
    • 6 ounces white chocolate (I used Baker’s chocolate squares), coarsely chopped
    • 1/3 cup flour
    • ½ teaspoon baking powder
    • 2 eggs
    • 2/3 cup packed brown sugar
    For the Truffles
    • 1 cup sweetened coconut
    • White Chocolate Almond Bark or Candy Melts
    • Sprinkles or additional toasted coconut, for decoration
    Instructions
    1. Preheat oven to 325°. Grease an 8x8” pan. Set aside.
    2. Combine butter and chocolate in a heat-proof bowl set over a pan of boiling water. Stir until melted. Remove from heat and let cool. If the butter and chocolate separate while cooling, stir with a wisk. Sift together flour and baking powder in a medium bowl and set aside.
    3. Beat eggs in an electric mixer until thick and creamy, about 5 minutes. Gradually beat in sugar and beat about 3 minutes more. Fold in the white chocolate mixture, alternating with dry ingredients.
    4. Pour batter into pan and bake about 30-35 minutes. Cool completely.
    5. While the brownies are cooling, toast the coconut in a 350° oven. Place coconut on a baking sheet in a single layer and place in oven. Watch it carefully, stirring often, so it doesn’t burn. It will start to turn golden in just a few minutes. Let cool.
    6. Make the truffles by crumbling the brownies into a large bowl and mixing with the coconut. Form desired size truffles and chill until hard, at least 30 minutes (overnight works too). Melt your white candy melts according to package directions and dip the truffles, tapping the excess before placing on a wax-paper lined cookie sheet. Cover with sprinkles or more toasted coconut.

    Whatever Friday

    Happy Friday everyone!


    1. This week I finally started my Valentine posts! I talked about my favorite book ever and shared these. Then I made more crust:

    3. When I comment on blogs, I often notice that people leave their URLs (typed out) but they aren't a clickable link. Early on I wondered how to handle that and Googled it. There is some HTML code you can use to make your URL a clickable link. Just make sure it's typed correctly, or it'll show up as you wrote it, not as a link. Here's the code I use:

    <a href="the URL you want to link to">Text you want to display</a>

    If I was linking to my linky party, I would replace the text in red with my party link: http://www.crazyforcrust.com/2012/01/crazy-sweet-tuesday_17.html

    And the then then I would replace the text in blue with what I want to actually show in the comment:

    4. I'm hosting a baby shower tonight. It's a "sprinkle" with lots of sprinkles, get it? Anyway, it's also a girls' night in. Which is a good thing. Because there will be appletinis. Lots of them.

    5. Remember that whole "I managed to agree to be in charge of food at a PTC event" thing? Well, the event is a Bingo Night and will host 265 people. For which I must organize, plan, get volunteers, and cook pasta for. The most people I've ever cooked for is about 20. I feel like I'm in an episode of Top Chef. Will I win or be sent home?

    6. Did anyone watch the Real Housewives of Beverly Hills finale? Please tell me I'm not the only person who cried like a baby at Ken's words when he gave Pandora away. It was almost the ugly cry, people.

    And with that, I'll say have a great football-free weekend everyone! (Jordan would do a happy dance after that sentence, but I'll hold mine in.)

    Oreo Crust Mix {Heart Munch}



    I have a wild imagination.

    When I was a kid, I imagined fires and bad people everywhere (I was afraid of the dark.)

    I also had an imaginary friend who I would have full conversations with. I would also hire new imaginary friends and fire the old ones. (Hmmm...issues?)

    Nowadays, my imagination runs toward food.

    It's all I can think about.

    On the treadmill, while watching TV, while driving. I think about desserts and how I can give ones I've seen my own twist. I brainstorm. I try to come up with new ideas.

    When I said I wanted to give crust to more things, I meant it.

    Now, crust is invading my Chex Mix.


    Yep, I put some crust in there. Oreo crust, to be exact.

    And white chocolate Chex and M&Ms. Because everything is better with M&Ms.


    The Elf Munch I made at Christmas was so popular, I decided to package some of it up and call it Heart Munch.

    The kids loved it. I took it to the park. The moms loved it too.


    I made the tags the same was as with the Elf Munch. I put the munch in a fold-top sandwich baggie, stapled it closed, and attached the tags with tape. Super easy.

    I hope my wild imagination is making you happy. Except for the fact that I can't think about anything but food, I'm enjoying it okay.

    Oreo Crust Mix {Heart Munch}

    Ingredients:
    12 Oreos
    3 tablespoons butter, melted
    1 cup white chocolate chips
    3 cups Chex mix (any flavor, I used Rice Chex)
    1 cup M&Ms (I used Valentine’s colors, but you don’t have to!)

    Directions:
    1.       Finely crush the Oreos in a food processor. Mix with the melted butter. Line a cookie sheet with parchment paper and press the Oreo mixture into a thin layer. Bake at 350° for 4 minutes. Cool and chill before breaking into pieces.
    2.       Melt white chocolate chips in the microwave on 50% power in 30 second increments, stirring between. Place Chex in a large bowl and pour melted chocolate over the top. Stir and spread out in a single layer on a wax paper lined cookie sheet. Let harden.
    3.       Assemble your mix: carefully break crust into bite-sized pieces. Break apart white chocolate Chex. Mix all in a large bowl and stir in M&Ms. Serve in a large bowl or portion into baggies for single servings.

    Yield: about 8 – ½ cup servings.

    Scotch Krispie Bark



    Can we talk books for a second? Before I get into how this Scotch Krispie bark is so freakin' awesome?

    I have been meaning to talk to you about Dean Koontz for a few weeks now. I even teased you about it two Fridays ago. But there was always something else to say.

    Anyway, I'm making time now, because if you aren't reading Dean Koontz books you're totally missing out.

    It's kinda like if you are going to the movies without eating popcorn. Or eating peanut butter without chocolate.

    I've been reading Dean Koontz books since I was in high school. (Probably not so appropriate for a 14 year old to read, but whatever. I've always been older than my age. Case in point? My husband.)

    All of his books are good; there hasn't been one I haven't liked. His Odd Thomas series is probably one of the best series I've ever read. But I want to go farther back.

    I want to talk about the first Dean Koontz book I ever read: Lightning.


    You know how, at some point in your life, you obsess about a song or a movie or a book and it's all you listen to/read/watch for ages? Your mom threatens to throw out your VCR and your friends call mutiny over listening to NKOTB again? Eventually you stop listening/reading/watching and find other things to love and obsess about, like Twilight. But then you pick up the book or pop in the DVD and realize what has been missing from your life for so long?

    That's what this book was for me. I couldn't find my tattered paperback (it's been missing for a long while) so I bought it for my Kindle. And I got sucked back in. Just like I was 14 again. There's intrigue. Mystery. Murder. Love. Dean Koontz spins words like Bakerella makes cake pops. He's serious, he's funny. It's amazing.

    Something else that's been missing from my life for too long? Scotch Krispie Bars. I haven't had them in years. A mom I used to know would bring them to potlucks and I'd devour them.

    So I thought, why not make them into a bark?


    With a layer of melted butterscotch chips.


    Topped with Rice Krispies.


    Then topped with melted chocolate chips. And swirled with peanut butter.


    Heaven in a candy.


    So awesome. Like Lightning. (Have you downloaded it to your Kindle yet??)

    Scotch Krispie Bark

    Ingredients:
    1 bag butterscotch chips
    1 bag semi-sweet chocolate chips
    1 ½ cups Rice Krispies Cereal
    ½ cup peanut butter

    Directions:
    1.       Line a cookie sheet with waxed paper. Place butterscotch chips in a microwave safe bowl and heat on 50% power for 1 minute, stir, and then add increments of 30 seconds until chips are melted and smooth. Spread on cookie sheet.
    2.       Sprinkle Rice Krispies cereal on top of butterscotch layer. Press down with your hands.
    3.       Melt semi-sweet chocolate chips in microwave, again using 50% power, stirring after 1 minute and continuing to heat at 30 second intervals until chips are melted. (If chocolate doesn’t seem smooth, add about a teaspoon or two of vegetable oil and stir.) Spread over Rice Krispie layer.
    4.       While spreading chocolate layer, melt peanut butter in microwave. Drizzle over spread chocolate and swirl with the back of a spoon.
    5.       Chill to harden bark, then break into pieces and serve.

    Crazy Sweet Tuesday

    Welcome back to Crazy Sweet Tuesday! Before we get to the features next week I want to talk about photos. Photo editing, to be exact.

    But first I want to say I'm a little peeved at Google. Well, maybe a lot.

    They are taking away Picnik. Picnik is the way I edit all my photos. All of them.

    {Want to know my dirty little secret? Not one photo gets posted on my blog that does not get edited.}

    It's also how I add those cool words and stuff. And my signature at the bottom.

    In fact, I just paid to upgrade. Which they'll be refunding, of course.

    I know they've added something to Google+ called "Creative Kit," which seems similar to Picnik. I tried it out a little and it's very similar but not the same. I want my Picnik!

    So, in anticipation of the closure...

    How do you edit your photos? What programs do you use? Internet-based or software, I want to know. Do you add words to your photos in another program? How do you edit? Please share your secrets! I'm sure lots of us are in the same boat.

    Chocolate Cherry Coconut Cookies by Simply Southern Baking. I love this idea! I always feel like I want so many different flavors when I bake and now, thanks to this, I can! Oh the combinations that can be made!


    Red Velvet Cake Batter Dip by Something Swanky. I mentioned in my Friday post about crushes. This dip solidified the one I have for the Something Swanky blog. I want to go swimming in that bowl.
