Lemon Cream Pudding Cookies

Do any of you watch The Next Food Network Star? I really enjoy that show, except for the fact that they change formats about as often as I bake. And that Giada seems way too thin. {Am I wrong there? I mean, she cooks for a living. Not that I want her to go all Paula Deen or anything, but geez. Way to make a baker feel bad about herself!}

My husband thought it was really funny when Linky was still a part of the show. Every week he'd make some crack like, "hey! I wonder if she has parties?"

Is it me, or is it difficult to watch them speak to camera? I mean, even now, when the show is almost over, it's like, a totally cringe-worthy hour.

There's stuttering and dropped eye contact and too much energy and not enough energy and why can't Martita just tell stories for goodness sakes!


Watching this show just reinforces one important factoid about me: I never want to have a cooking show. Ever.

People tell me all the time, you should video tape yourself! You should totally audition! You should start doing videos in your blog! How-tos! It would be awesome!

Um, no. No it most definitely would not. I'd be just like one of those sputtering wanna-be Food Network chefs. But worse.

And my voice. I actually want you all to like me. I don't know how my husband stands it. Whenever I hear myself taped I just cringe and plug my ears.

{Although, I often think that my voice is akin to a dog whistle; one that only adults can hear. Because Jordan never can seem to hear me when I speak.}

Anyway, so even though I love watching Food Network Star, don't be all expecting videos here. I'm totally content to make you cringe with my written word.


Remember pudding cookies? I've done a couple versions now. Don't ask me to pick a favorite…I love them all. But, if someone were to point a frosting gun at my head and demand a favorite under penalty of appearing on video, I may have to say I liked these the best.

It may have been because of the cream filling. Tart, sweet, and just right. Sandwiched between two fluffy pudding cookies. Two cookies are always better than one.



I'd make a video about it. But then you'd have to un-friend me. So take my written word for it, mmkay?


Lemon Cream Pudding Cookies
by Crazy for Crust (adapted from Chef-in-Training)

Ingredients
    For the Cookies
    • 1 ½ sticks butter
    • 1 cup granulated sugar
    • 1 (3.4 oz) package instant lemon pudding mix
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1 tablespoon lemon zest (from 1 lemon)
    • 1 tablespoon lemon juice
    • 1 tsp baking soda
    • 2-1/4 cups flour
    For the Filling
    • ¼ cup butter, softened
    • 2 cups powdered sugar
    • Zest of 1 lemon
    • 2 tablespoons fresh lemon juice
    Instructions

    1. Preheat oven to 350°. Line cookie sheets with parchment paper and set aside.
    2. Whisk together baking soda and flour and set aside.
    3. Cream together butter and sugars. Add the pudding package and beat until well blended. Add eggs, lemon zest, lemon juice and vanilla extract. Slowly add the flour and mix until just combined.
    4. Roll into 1” balls and place on your cookie sheets. Bake for 10-12 minutes. Let cool before filling.
    5. To make the filling: beat butter and powdered sugar until combined. Mix in zest and lemon juice. Cover the bottoms of half the cookies with the filling, and top with remaining cookies. Chill until frosting is firm.

    Yes, I am hooked on The Next Food Network Star too. No one really stands out to me as a real start this season. The last few seasons the Hubby and I had a definite favorite, not so much this go around. Who is your favorite?

    I would never be able to think on my feet fast enough to be on a show like that. I need time to think about my dish.

    Did you ever used to tape-record yourself on one of those oldschool tape machines? I swear there was some conspiracy where they purposely morphed your voice to create a generation of low-self-esteemed people who would never speak again. Maybe they were trying to create work for the psychologists who work with mutes? At any rate... I totally agree- although I would love to watch a tutorial by you! Lemon pudding cookies sound absolutely delicious.

    That is one of my favorite shows! But I could absolutely never ever do a show...I am actually way too shy!!! Maybe if someone was right there holding a yummy lemon cookie out in front of me? No, not even then:-) Way cool cookies!!!

    But you do tell a good story, Dorothy! Me and the husband just finished watching an episode a few minutes ago. It always makes me glad it's them and not me in front of the camera! These cookies look wonderful. Something about lemon in the summertime - I just love it!

    Those cookies look delicious! I love lemon desserts (it's actually my post for today that I haven't done yet). I couldn't imagine being on the Food Network because of the stress involved but I do think making videos are fun and pretending. :) Sometimes I think about making one and posting it on my blog just because I'm feeling crazy and want to see the reaction. Maybe one day...for now, I love your cookies!

    I agree - none of them really stands out. I think, if she can get her act together, I like the blonde with the short hair - she could be really good. Otherwise it's kind of underwhelming. And I agree - I obsess over the food way too long to be on that show!

    My first reaction to the picture of your cookies was, ohhh mmmmyyyy. :) They look so delicious, Dorothy. Just beautiful! I really need to make these pudding cookies...Just might have to do that this weekend. :)

    I've only been watching the show the last few weeks. Kinda like the Bachlarette...I wait to see who's in the finish. (I can't believe she let Sean go...Ari? Hum.) I don't know any of their names, except Ippy. They need a new guy chef, but the 3 remaining just don't have the beef IMO. Martitia, well, I think they really wanted her {a lot}, but she just got caught up in the food. That's been sad to watch.

    2. I don't know why I never asked you if you watch FNS either, because I do, and I really have some strong opinions on this show. And by that, I mean I hope no one wins because I despise them all. That one boy wears more lipstick than anyone else on the show, and I wish someone would just slap Marty. Also, that one girl, the one who thinks she's hot stuff--Nicki? Looks like a cabbage patch doll that grew up and was tortured for years by being forced to eat sour skittles. She perpetually has this bitter, sour-fied expression on her face.

    Hahahaha! I have the same feeling about the Next FN Star. I could never be in front of a camera myself, but that being said, some of the contestants are just painful to watch. And I totally agree about Giada - she is definitely too thin! Just found your blog a couple of weeks ago and have been really enjoying it! Thanks for fun posts and good recipes too!

    The problem with these kind of "complicated" desserts is that I never seem to make it to the second step. I'd just eat all of the cookies. Or, rather, mash them up into a bowl of ice cream. This flavor looks delish!

    OMG, I could never have a Food Network show or even post a video on my blog. I'd totally die of embarrassment because I am a total dork. And then everyone would know it! If I just keep typing and showing pictures of my food instead of me, then no one will be the wiser to my nerdiness!

    P.S. I don't think Giada necessarily looks TOO thin, but she does come off as one of those "portion control" people. You know, the ones who are satisfied with one cookie? Um no. Around here, if I'm eatin' cookies, there's nothing else for dinner.

    Hey Dorothy, I made these with a bit of a twist and they turned out GREAT! Recipe is fantastic and the results are delish. Thanks for your continued creativity and inspirations! I'd never even heart of pudding cookies and now I think I just might be hooked. :)
