Carrot Cake Pie {Pi Day Blog Hop}

It's here! It's finally here!


It's Pi Day! It's Pi Day! Yippee it's 3/14, Pi Day!

Seriously people, I look forward to this day all year long.

If you read my post last year on Pi Day, you'd already know I'm crazy. But so many of you are new (hi new friends!) so you really have no idea how big of a dork I am.

Let me make a list for you, shall I?

I once had a license plate that read I TCH PI. It is now hanging in my office (well, it will be once I get off my butt and paint in here).

I do math problems for fun. Yes, my idea of fun is getting out my high school geometry text book (yes, I own a copy; that was a very happy day when I found it at Goodwill) and doing proofs.


Essentially, I'm saying that doing proofs relaxes me.


Since I'm too cheap to spend $30 on a t-shirt from Zazzle, I made my own Pi shirt last year. I'll be wearing it again today. I wanted to make a Pi googley eye headband, but thought that might be too much.

My personal email? Has 314 in it.

Whenever I have to pick a number for any reason? You guessed it, I choose 314.

You could say I'm a teensy bit obsessed.

Is it weird that it makes me sad that I have to wait until the third grade before Jordan learns about Pi in school? Where I can offer to bring pies for snack and the kids will understand what the heck I'm doing?


Usually we have pizza for dinner on Pi Day.  Because it's round. (And yummy. And the perfect dinner for a rainy night when softball is cancelled.)

This year, because I'm the hospitality person for the PTC, I'm bringing the teachers pie. Lots of pies. Big pies, little pies, whoopie pies.  But not this carrot cake pie. No, that was for me my friends.


I found a recipe for Carrot Cake Blondies and thought it would make an awesome pie. Then I topped it with white chocolate cream cheese frosting to make it even awesomer. And oh. My. GOD.

Totally worthy of a Pi Day post. Totally. Like eat-two-huge-slices worthy.


And totally blog hop worthy too. Because today is a special occasion. And I'm celebrating with a Pi Day Pie Blog Hop with some other awesome bloggers who may or may not be wearing a Pi t-shirt too. (I think I may be the only crazy one of us in the bunch.)

Carrot Cake Pie

by Crazy for Crust (Adapted from A Stool at the Counter and The Cake Book)
Keywords: carrot cake pie
Ingredients
    For the Pie
    • 1 premade pie crust (or your favorite recipe)
    • 1 cup flour
    • ½ teaspoon baking powder
    • 1/8 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 ½ teaspoons cinnamon
    • 1/8 teaspoon ginger
    • 1/4 cup melted butter
    • 1 cup brown sugar
    • 1 teaspoon vanilla
    • 1 egg
    • 1 cup shredded carrots
    For the Frosting
    • ¼ cup white chocolate chips
    • 5 ounces cream cheese
    • 1 tablespoon butter
    • ½ teaspoon vanilla
    • ¾ cup powdered sugar
    Instructions
    1. Preheat oven to 350.
    2. Line a 9” pie plate with the premade crust, crimping the edges. Refrigerate until ready to fill.
    3. Combine flour, baking powder, baking soda, salt, cinnamon, and ginger in a medium bowl.
    4. Cream together butter and sugar with a mixer. Stir in eggs and vanilla until just combined.
    5. Stir dry ingredients into wet until just combined. Fold in carrots.
    6. Pour into prepared pie crust. Bake 25-30 minutes until the top is set and a toothpick comes out with only crumbs clinging to it. (If your crust starts to get too dark, cover it with strips of aluminum foil.) Let cool before frosting.
    7. To make the frosting: melt white chocolate chips in a small bowl in the microwave on 50% power in 30 second increments, stirring in between each, until melted. Let cool slightly. In a large bowl, beat cream cheese and 1 tablespoon butter with a mixer until creamy. Beat in melted white chocolate. Stir in vanilla. Add powdered sugar and beat slowly until combined. Use a 1M tip to frost around the edges and in the center, or just frost the entire top of the pie (which is what I will do next time).

    haha! I can honestly say I am not one of the few who are crazy for PI, but give me a slice of your Carrot Cake Pie and that just might make me do cartwheels for math!!! It looks absolutely yummy!!! (sorry no PI shirt here either:-)

    Oh wow, that's a lot of love for math! I'm the absolute worst at math and am kinda glad I don't really use it too much anymore. Sorry for the sad truth! Not a darn thing wrong with celebrating Pi day though! Perhaps I'll throw a quick pie together for my coworkers before leaving!

    Dorothy! Congrats on being selected at Foodbuzz. THAT'S a BIG deal! This is such an interesting recipe and post....you are funny for sure. When I did a presentation for a high school Life Skills class last year, at Halloween time, I saw a boy wearing an orange hoodie with a 'pi' symbol hanging on the front...he was a Pumpkin Pi of course. =) I can't stand math...but some folks gotta do it.     You know how I feel about carrot cake... AND math... but I still love you and think you're awesome. Also, I'm not sure how I feel about carrot cake anymore since A) this cake is actually a giant blondie and B) the piping looks amazing and C) it's a giant blondie, piped with frosting, stuffed in a pie shell. So I think carrot cake and I COULD BE alright now. I may even want a giant slice or two like you said! Now if you could get me to like my polynomial long division and factoring as much, I'd be really happy :) thanks again for rounding all us chicks up for an awesome bloghop!! I had so much fun!
