Fruit Rainbow

This isn't so much a recipe as it is an idea you can use if you're having a St. Patrick's Day Party. This was another treat we served last year at the party we had to celebrate the leprechauns. It's probably the easiest thing you can do, and it's healthy too. This would also be a good party snack for Easter, anytime in Spring, or even a Wizard of Oz birthday party.


The trick is to find "rainbow" colored fruit. I used strawberries, mandarin oranges, pineapple, green grapes, blueberries, and red grapes (that looked purple). You could use any fruits that are in this color palate: raspberries, kiwi, bananas, plums, peaches, etc. You could even mix in some veggies like celery and carrots to take the place of some of the fruit.

The "pot of gold" at the bottom is filled with peanut butter Ritz cracker sandwiches. If peanut butter is an issue, you can use whatever you like (Nutella, anyone??)  If the party you're having isn't for St. Patrick's Day, you could omit the crackers and use a bowl of vanilla yogurt, cool whip, or a mix for a great dip that looks like a cloud at the end of the rainbow.

Enjoy! Don't let the leprechauns make too much mischief!
